Tracking My Resolutions

I am a perennial New Year's resolutions maker. I wish I were as good at keeping up with them throughout the year! This year, I did some hard thinking. After years of failing at many (okay, almost all!) of my (usually unrealistic) resolutions, I considered not even thinking about any for this year. This thinking had to go, however, because on the top of my list of possible resolutions was to be more optimistic about everything and everyone. To give up on resolutions completely would be a new level of pessimism to which I am not willing to stoop!

Through my free subscription to Woman's Day (I find out about a lot of free magazine subscriptions at,) I learned about The Happiness Project. From what I understand, it began as a woman's personal blog chronicling her implementing new habits into her life. She has a new book out which is also titled The Happiness Project. Through reading an excerpt from her book, I began to think about each of my goals as being attainable by way of forming new habits, often while eliminating others. (Flylady is also a great advocate of this idea, by the way.)

I am being transparent here when I say that I am not very disciplined and I love instant gratification. I am not satisfied with either of these parts of my character. As a Christian, I know that with God's help, I am to become more like Christ each day. Christ definitely was neither undisciplined or self indulgent in any way!

A comment left on The Happiness Project blog mentioned a daily goals (habits)tracking website called It's free and easy to open an account. You get to give yourself a checkmark for each thing that you complete each day. it gives you the total number of checkmarks for each day, as well as a 30 and 60 day report. I really think that this simple tool may just help me bring some of my resolutons to fruition!

Easy Pumpkin Spice Muffins

These were a hit. While they are probably not my absolute favorite pumpkin spice muffin recipe, they are sooooo easy. That makes this recipe a keeper. They are also very moist.

I used a large can of Libby's Pumpkin Pie Mix (not sure how many ounces), and a Spice Cake Mix, and 1/4 cup of water. I mixed it with the electric mixer. It is supposed to make about 18 muffins. It is baked at 350 degrees for 30 minutes.

It was the perfect easy baking project for my first since our baby was born. It even fit into one of her naptimes!

Delicious Chicken Taco Soup

I didn't take a picture, but I have the most delicious recipe for chicken taco soup. My mother-in-law made it yesterday, and it was scrumptious. I had been looking for a recipe like this for a while, and my search is over. This is definitely a keeper.

Chicken Taco Soup

1 13 oz. can drained chicken
1 11oz. can diced tomatoes and chiles
1 28 oz. can diced tomatoes
1 4 oz. can green chiles
1 15 oz. can kidney beans
1 15 oz. can black beans
1 11 oz. can whole kernel corn
1 pkg. taco seasoning mix
1 pkg. ranch dressing mix

Toppings-sour cream, shredded cheese, tortilla chips

Shred the chicken. Combine all ingredients in crockpot. Cook on high for 2 hours, or low for 4 hours.

One week till our baby's due date, and it is hard to get my mind on anything else! All of her things are ready. I feel "ready as I'll ever be," so now it's just the challenge of waiting for our little sweetheart to decide to make her big appearance!

Tonight, I did some baking, and was happily distracted for a while. I have been filling my favorites file with various baking recipes lately. I was happy to be able to try one finally. I made a chocolate orange bundt cake. While I don't care for chocolate and orange as a flavor combination, the cake was very moist and delicious. Some people really love orange and chocolate, so I thought I would go ahead and post a link to the recipe.

My next baking project (if Baby Girl doesn't decide to interrupt my plans!) will probably be something pumpkin chocolate chip. I have left over chocolate chips from the bundt cake, and I am curious about this flavor combination. It doesn't sound that great to me, but some people rave over it.

Tada List

Spurred on by a strange combination of nesting urges :), an upcoming church yardsale, and watching too many episodes of Clean House, I've been decluttering.

In July I wrote about how is a paperless way to organize passwords and contact information. Since then I have considered opening a third account to organize recipes. I just haven't started that project yet.

Another free online site that helps me go paperless is Tada List. It is for organizing todo lists. I love writing todo lists, but have been known to lose them. This eliminates that problem. It allows you to organize and categorize all your items into multiple lists.

Fishing Buddies

These are a couple of pictures of my husband and niece which I took on our little fishing trip this week. They were so cute together, that I actually took several more pictures. I'm imagining similar scenes in the next few years, except with our baby girl!

Blue Heron

This week I got to tag along on a little fishing trip with our niece and nephew, my father-in-law, and my husband. I don't have a fishing license, so I just enjoyed sitting on the dock and taking lots of pictures.

A heron flew on to the dock and ate the small blue gill that he was thrown. The fishing wasn't very impressive, and we ended up getting rained out, but we certainly had a relaxing time while we were out there!
